Sponge cake dough
Ingredients
- 125g Blédor Pâtissière
 - 125g sugar
 - 30g Butter (optional)
 - 4 Whole eggs
 
Preparation
- Place the whole eggs in a stainless-steel bowl and add the sugar. Whip this mixture in a double boiler until it forms a ribbon
 - Remove the bain-marie and continue to whip until fully cooled.
 - Then add the flour gradually while stirring with a wooden spatula and finally add the melted butter (optional).
 - Pour the dough into a buttered and floured flat tin and bake for 15-20 minutes in the oven preheated to 2000C.
